Its so good. You need: 1lb ground beef, 1 lil tube jimmy dean sausage,canned diced tomatoes, canned (or fresh) mushrooms, canned sliced olives, 1 yellow onion, fresh garlic (in a lil glass jar) container of cottage cheese, 1 egg, parmasean cheese (the powder kind, not a block) a bag of shredded motzerella, and a block of motzerella. And 2 jars of whatever kind of spaghetti sauce you like, you can use 2 different flavors, and a cheap jar of italian seasoning, salt pepper, garlic powder. And lasagna noodles, please don't forget those! Brown the hamburger meat and the sausage in 2 different pans, drain. In a big pot put the tomatoes, chopped up onion, mushrooms, olives, 1 %26amp;1/2tspgarlic spaghetti sauce and the meat. Add about 1 1/2 tps of salt. 1 tsp pepper, and 1 1/2 tbsp* italian seasoning. 1 tsp garlic powder. stir it all up good, cook on medium for about 30 mins, till it's boiling a lil bit. turn down to low. in mixing bowl beat one egg and mix in cottage cheese and 1/.2 cup parmasean. boil the lasagna noodles for however long the box says with a pinch of salt and a small spoon of butter. drain. rinse in cold water cuz they will be hot. In a large glass baking pan, layer a layer of the noodels first. spread 1/2 the cottage cheese mixture evenly over the noodels. spread spaghetti sauce (a lot) evenly over the cottage cheese mix. slice up the block of cheese into thin strips and layer it on top of the sauce. then again do a layer of noodels, rest of cottage cheese, sauce, and on top put whatever slices of cheese you have left and a ton of shredded cheese. Bake at 375 for 50 minutes. Don't forget to preheat the oven. garlic bread is a must with this and you can also include green peppers in the sauce if you like them, i don't. it sound like a lot, but it's sooooo good, it will ba a favorite recipe of yours if you make it, i'd put money on it. :)Your best classic lasagna recipe?

INGREDIENTS


9 lasagna noodles


1 tablespoon olive oil


1 pound ground beef


1 pound bulk Italian sausage


1 (16 ounce) can sliced mushrooms, drained


1 teaspoon garlic salt


1 teaspoon dried oregano


1/2 teaspoon dried thyme


1/4 teaspoon dried basil


4 (15 ounce) cans tomato sauce


salt and pepper to taste


1 (15 ounce) container ricotta cheese


3 eggs, beaten


1/3 cup grated Parmesan cheese


1 pound shredded mozzarella cheese











DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C).


Bring a large pot of lightly salted water to a boil. Add the lasagna noodles and olive oil; cook until al dente, 8 to 10 minutes; drain.


Cook the ground beef and sausage in a large pot over medium heat; drain. Stir in the mushrooms, garlic salt, oregano, thyme, basil, and tomato sauce. Season with salt and pepper; simmer 30 minutes.


Meanwhile, mix together the ricotta cheese, eggs, and Parmesan cheese in a bowl.


Ladle enough of the meat sauce into a 9x13 inch baking dish to cover the bottom in a thin layer. Form a layer atop the sauce with 3 of the lasagna noodles. Spread about 1/4 of the ricotta cheese mixture over the noodles. Sprinkle about 1/3 of the mozzarella cheese over the ricotta cheese mixture and then ladle about 1/3 of the meat sauce over the mozzarella cheese. Repeat layering twice more, topping with the remaining 1/4 pound of mozzarella cheese.


Bake in preheated oven 90 minutes. Allow to sit 10 to 15 minutes before serving

I am italian and love lasagna. I hate the thought of preparing it as it takes so long. I found a recipe for Crock Pot Lasagna. I was not so sure about this but I tied it and I have to tell you that it was absolutely delicious.Instead of layering it in a 9x13 pan layer it in a crock pot. I started off with sauce and ended with sauce. You can either break your noodles in small pieces or fit them to the bottom of your crock pot. Cook on high for about 2 hours and then turn it to low. first put some olive oil about 1/3 cup in a pan heat it put the beef cook until brown add tomato paste cook for one minit add the seasoning stir add water let it cook with out the pan lid until its consitrated with a litile sause prepare the lasange do the pachamle sause by melting the butter then add the flour stir the add the milk not at one time keep stiring put the nut meg and keep stiring until it thikens lay the ingrediant as layers pasta beef bashamel then past beef bashamel then top it with chees cover it with foil but in oven for 15 minits under 180 degrees then move the foil cook for 5inits until chees milts -------------- good luck

    1 cup chopped celery


    1 cup chopped onion


    1 cup chopped green or red sweet pepper


    1-1/2 teaspoons dried basil or oregano, crushed


    2 bay leaves


    1 clove garlic, minced


    1 beaten egg


    2 cups fat-free ricotta cheese


    1/4 cup grated Parmesan cheese


    1 cup shredded part-skim mozzarella cheese (4 ounces)


    1/8 teaspoon salt


    1/4 teaspoon black pepper





    Directions


    1. Cook noodles and broccoli separately according to their package directions; drain well. Set aside.


    2. For sauce, in a large saucepan stir together tomato sauce, undrained diced tomatoes, celery, onion, sweet pepper, basil, bay leaves, garlic, and salt. Bring to boiling; reduce heat. Simmer, uncovered, for 20 to 25 minutes or until sauce is thick, stirring occasionally. Discard bay leaves.


    3. Meanwhile, for filling, in a bowl stir together egg, ricotta cheese, Parmesan cheese, and black pepper. Stir in cooked broccoli.


    4. Spread about 1/2 cup of the sauce in a 3-quart rectangular baking dish. Top with half of the noodles, half of the filling, and half of the remaining sauce. Repeat layers, ending with the sauce.

    1 3/4 cup cold water


    2 eggs


    1 15oz container Ricotta cheese


    1/2 tsp. salt


    1 pkg. frozen chopped spinach (10 oz.), thawed and drained


    1/2 lb. sliced mozzarella cheese--


    1/2 lb. uncooked lasagna noodle, broken in half





    Instructions:


    Empty spaghetti sauce mix into saucepan, add tomato paste, tomato sauce and


    water. Heat, stirring until well blended. Remove from heat. Beat eggs


    in a large bowl and add Ricotta cheese, spinach, salt and 1/4


    cup Parmesan cheese. Lightly grease bottom of


    13x9x2-inch baking dish; cover with a little sauce. Layer noodles, half of

    2 c lowfat cottage cheese


    1/4 c Parmesan cheese -- grated


    1 tsp basil

    Preheat oven at 350. This recipe calls for a 13 x 9 x 2'; pan unprepared;


    set it aside. To prepare White Sauce, heat margarine in a 1 quart saucepan


    over low heat until melted. Stir in flour and salt. Cook over low heat,


    stirring constantly, until bubbly; remove from heat. Stir in milk. Heat to


    boiling, stirring constantly. Boil and stir 1 minute; cover and keep warm.


    If sauce thickens, beat in small amounts of milk. To prepare lasagna


    noodles, cook them as directed on package directions. In a mixing bowl,


    combine spinach, cottage cheese, Parmesan cheese, basil, oregano, and


    pepper; set aside. In a skillet, cook mushrooms, carrots, onions, and bell


    peppers until soft and tender; set aside. Arrange 4 noodles in pan. Top


    with with half cheese mixture, 1/2 cup mozzarella cheese and 4 more


    noodles. Layer cooked vegetables on noodles. Spread half of the White Sauce


    over top. Top with remaining noodles, cheese mixture, White Sauce, and


    mozzarella cheese. Bake for 45 minutes. Let stand 10 minutes before

    12 dry lasagna noodles


    2 tablespoons olive oil


    2 heads fresh broccoli, chopped


    2 carrots, thinly sliced


    1 large onion, chopped

    3 cups milk


    3/4 cup Parmesan cheese, divided

    24 ounces ricotta cheese

    Preheat oven to 375 degrees F (190 degrees C). Grease a 9 x 13 inch casserole dish. Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.





    Heat oil in a large cast iron skillet over medium heat. When oil is hot add broccoli, carrots, onions, bell peppers, zucchini and garlic. Saut茅 for 7 minutes; set aside.





    Place flour in a medium saucepan and gradually whisk in milk until well blended. Bring to a boil over medium heat. Cook 5 minutes, or until thick, stirring constantly.     Ingredients





    * 9 whole-wheat lasagna noodles


    * 1 tbsp (15 mL) olive oil


    * 1 cup (250 mL) red onion, diced


    * 4 cups (1 L) mushrooms, sliced


    * 3 cloves of garlic, minced


    * 1 bag (10 oz) baby spinach, washed and dried


    * 1 jar tomato sauce (about 2 cups)


    * Pepper to taste


    * 1 cup (250 mL) light feta cheese


    * 1 container (475g) light ricotta cheese


    * 2 cups (500 mL) light mozzarella cheese, shredded





    Directions





    1. Preheat oven to 375 F (190 C).


    2. Cook the lasagna noodles according to package directions. Drain and set aside.


    3. To make the sauce: Heat oil in a large sauce pan over medium heat. Add onions and mushrooms and cook for 10 minutes. Add garlic and spinach. Cover and cook until the spinach is wilted. About 5 minutes. Uncover and cook on medium heat for about 10 minutes or until most of the liquid has evaporated. Add the tomato sauce and pepper.


    4. To make the lasagna: Line the bottom of a 9x13 inch baking dish with 3 lasagna noodles. Top with half of the ricotta cheese, half of the sauce and half of the feta cheese. Repeat. Place the final 3 noodles on top and cover with mozzarella cheese.

    this is all i layered it with, but depending on your taste you may like mushrooms, or ricotta cheese in the layers too =]
    Leave out the meat, using a marinara sauce and mix in some chopped spinach with the ricotta cheese mixture. That's all I do!

    VEGETABLE LASAGNA


    7 oz lowfat goat cheese


    1/3 cup chopped pitted black olives


    1 tbsp chopped fresh thyme


    1/2 tbsp dried basil


    1/2 tbsp dried oregano


    2 tsp minced garlic


    4 cups prepared pasta sauce


    1 lb whole-wheat lasagna


    Freshly ground black pepper


    2 small zucchini, diced


    2 small summer squash, diced


    3/4 cup bottled roasted red pepper, diced


    1/4 cup grated Parmesan





    Heat oven to 375掳F. Mix goat cheese, olives, thyme, basil, oregano, and garlic in a bowl; season with salt and pepper. Spread 1 cup pasta sauce on the bottom of an 8'; x 11'; baking dish. Add one layer of lasagna and season with black pepper. Add a layer of zucchini, squash, and red pepper. Dollop spoonfuls of goat cheese mixture over vegetables and spread to cover.     WILD MUSHROOM LASAGNE


    For b茅chamel sauce


    3 tablespoons unsalted butter


    2 1/2 tablespoons all-purpose flour


    3 cups whole milk, heated


    1 garlic clove, smashed


    3/4 teaspoon salt


    1/8 teaspoon black pepper





    For mushroom tomato sauce


    2 cups boiling-hot water


    1 oz dried porcini mushrooms (1 cup)


    1 cup chopped onion (1 medium)


    2 tablespoons extra-virgin olive oil


    2 (14- to 15-oz) cans diced tomatoes in juice


    Pinch of sugar


    2 tablespoons chopped fresh basil


    1/2 teaspoon salt





    For assembling lasagne


    12 long ruffle-edged dried lasagne noodles (not no-boil)


    5 oz finely grated Parmigiano-Reggiano (1 3/4 cups)





    Make b茅chamel:


    Heat butter in a 2-quart heavy saucepan over moderately low heat until melted, then add flour and cook roux over low heat, whisking, 3 minutes. Add hot milk in a fast stream, whisking vigorously, and whisk in garlic and salt. Bring to a boil, whisking. Reduce heat and simmer, whisking occasionally, 10 minutes, then remove garlic and add pepper.





    Make mushroom tomato sauce:


    Pour boiling-hot water over porcini in a bowl and let stand until softened, about 20 minutes.Lift out porcini, squeezing excess liquid back into bowl, then rinse to remove any grit. Pour soaking liquid through a sieve lined with a dampened paper towel into another bowl. Chop porcini and add to soaking liquid.





    Cook onion in oil in a 12-inch heavy skillet over moderate heat, stirring occasionally, until softened, 4 to 5 minutes, then stir in tomatoes with juice, sugar, porcini with soaking liquid, and 1 tablespoon basil. Simmer, stirring frequently, until tomatoes have broken down into a chunky sauce, about 25 minutes. Stir in salt and remaining tablespoon basil.





    Assemble and bake lasagne:


    Cook lasagne noodles in a 6- to 8-quart pot of boiling salted water 8 minutes (noodles will not be cooked through), then drain and transfer to a bowl of cold water.





    Put oven rack in middle position and preheat oven to 425掳F.





    Spread 1 cup b茅chamel on bottom of a buttered 13- by 9-inch baking dish, reserving remainder for last layer. Drain 3 lasagne noodles in 1 layer on a kitchen towel and arrange over b茅chamel in baking dish. Spread pasta in dish evenly with one third of mushroom tomato sauce and sprinkle with 1/3 cup cheese. Repeat layering of pasta, mushroom tomato sauce, and cheese twice, then cover with last 3 lasagne noodles. Spread remaining b茅chamel on top and sprinkle with remaining 3/4 cup cheese.





    Bake, uncovered, until lasagne is bubbling and top is browned, 30 to 35 minutes. Let stand at room temperature at least 15 minutes before cutting.





    Cooks' notes:


    鈥?B茅chamel and mushroom tomato sauces can be made 2 days ahead and cooled, uncovered, then chilled separately, covered. Bring sauces to room temperature before using.

    Make b茅chamel:


    Cook garlic in butter in a 3-quart heavy saucepan over moderately low heat, stirring, 1 minute. Add flour and cook roux, whisking, 3 minutes. Add milk in a stream, whisking. Add bay leaf and bring to a boil over moderately high heat, whisking constantly, then reduce heat and simmer, whisking occasionally, until liquid is reduced to about 4 cups, about 10 minutes. Whisk in salt and white pepper, then remove from heat and discard bay leaf. Cover surface of sauce with wax paper until ready to use.





    Make pesto and ricotta mixture:


    Coarsely chop 1/3 cup hazelnuts and reserve for sprinkling over lasagne.





    Pur茅e parsley, Parmigiano-Reggiano, 2/3 cup oil, garlic, 1 teaspoon salt, 1 teaspoon pepper, and remaining cup hazelnuts in a food processor until pesto is smooth, about 1 minute.





    Whisk egg in a bowl, then stir in ricotta, 1 cup parsley pesto, remaining teaspoon salt, and remaining 1/4 teaspoon pepper until combined well.





    Stir together 1/4 cup pesto and remaining 1/4 cup oil in a small bowl for drizzling over lasagne.





    Roast eggplant for lasagne:


    Put oven racks in upper and lower thirds of oven and preheat oven to 450掳F. Oil 2 large baking sheets.





    Brush eggplant with oil on both sides, then arrange in 1 layer on baking sheets and sprinkle with salt and pepper. Bake eggplant, switching position of sheets halfway through baking and turning slices over once, until tender, 20 to 25 minutes total.





    Assemble lasagne:


    Put oven rack in middle position and reduce oven temperature to 425掳F. Lightly oil a 13- by 9- by 2-inch glass or ceramic baking dish (3 quart) and line a larger shallow baking pan with foil.





    Spread 1 cup b茅chamel in baking dish and cover with 3 pasta sheets, leaving spaces between sheets. Drop 1 cup ricotta mixture by spoonfuls over pasta, spreading evenly (layer will be thin), then top with 1 layer of eggplant, cutting rounds to fit if necessary. Make 1 more layer each of b茅chamel, pasta, ricotta, and eggplant. Spread with 1 cup b茅chamel and cover with remaining 3 pasta sheets. Spread remaining cup ricotta mixture over pasta, then spread ricotta with remaining cup b茅chamel and top with remaining eggplant in 1 layer (you may have a few slices left over). Sprinkle Parmigiano-Reggiano over eggplant and scatter with reserved chopped hazelnuts.





    Tightly cover baking dish with oiled foil (oiled side down), then set dish in foil-lined pan (to catch drips) and bake lasagne 30 minutes. Remove foil and bake until golden and bubbling, 10 to 15 minutes more. Let lasagne stand 15 to 20 minutes before serving.





    Serve lasagne drizzled with pesto.

    鈥?Lasagne can be assembled 2 hours ahead and chilled, covered. Bring to room temperature before baking.

    ROASTED VEHETABLE LASAGNE


    1 lb plum tomatoes, cut in 1/4-inch slices


    1 lb zucchini, cut in 1/4-inch slices


    1 lb yellow squash, cut in 1/4-inch slices


    2 red bell peppers, cut in 1-inch strips


    2 green bell peppers, cut in 1-inch strips


    1/2 lb mushroom caps, cut in 1/4-inch slices


    1 tsp salt


    1 tbsp olive oil


    Vegetable-oil cooking spray


    1 egg white, lightly beaten


    2 containers (15 oz each) ';lite'; ricotta


    2 tbsp bottled pesto sauce


    1/3cup grated Parmesan


    3 cans (14 1/2 oz each) diced tomatoes with garlic and onion


    12 oven-ready lasagna noodles (1 package)


    2cups shredded lowfat mozzarella





    Preheat oven to 475掳F. Toss plum tomatoes, zucchini, squash, peppers, mushrooms, salt, and oil in a bowl. Coat a baking sheet with cooking spray and place vegetables on it; roast 30 minutes. In a bowl, mix egg white, ricotta, pesto, and Parmesan. Coat a 9'; x 12'; baking pan with cooking spray. Spread 1 can tomatoes on the bottom. Top with 3 noodles. Spoon 1 1/4 cups ricotta mix over noodles, then a layer of 3 cups vegetables, then 1/2 cup mozzarella. Repeat this layer, starting with tomatoes. Add final can tomatoes, three noodles, remaining ricotta mix and vegetables. Top lasagna with last 3 noodles and 1 cup mozzarella. Cover with foil. Bake 30 minutes.

    Spagetti Sauce


    8oz frozen spinach, thawed and drained


    1 large container of ricotta cheese


    2 eggs


    3-5 cloves of garlic (depending on preference)


    shredded mozzerella cheese (amount varies depending on preference)


    1 teaspoon Italian seasoning





    Mix eggs, garlic, ricotta, italian seasoning and spinach.





    Cover bottom of pan with spagetti sauce, then layer noodles, then ricotta mixture, then mozzerella. Repeat until pan is full. For final layer put spagetti sauce and then cover with remaining mozzerella.





    Cover with foil.


    Bake at 350 for 1 hour. Remove foil and bake until cheese is melted.

    Convenient Vegetarian Lasagna





    INGREDIENTS


    2 (12 ounce) packages lasagna noodles


    2 pounds ricotta cheese


    4 eggs


    1 cup grated Parmesan cheese


    1/3 cup chopped fresh parsley


    2 teaspoons dried basil


    ground black pepper to taste


    1/2 cup olive oil


    1 1/2 cups chopped onion


    1 cup sliced carrots


    1 1/4 cups chopped green bell pepper


    1 (16 ounce) package chopped frozen broccoli, thawed and drained


    3 cups chunky-style spaghetti sauce


    2 cups shredded mozzarella cheese, divided


    DIRECTIONS


    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.


    In a large bowl, combine ricotta cheese, eggs, Parmesan cheese, parsley, basil and ground black pepper. Stir to blend; set aside.


    Heat oil in a large saucepan over high heat. Saute onions for about 5 minutes, stirring occasionally; add carrot slices and saute about 2 minutes, then stir in green bell pepper and broccoli. Stir all together, reduce heat to medium and cook until tender, about 5 minutes. Scrape veggies into ricotta mix and mix well.


    Preheat oven to 350 degrees F (175 degrees C).


    Ladle 1 cup of spaghetti sauce into a 9x13 inch baking dish and spread evenly over the bottom. Place 2 strips of lasagna lengthwise in the dish, then spread about 4 cups of the filling over the pasta. Sprinkle 1 cup of the mozzarella cheese over the filling; repeat layers.


    Bake at 350 degrees F (175 degrees C) for 1 hour; let stand about 15 to 20 minutes, to firm up, before serving.





    I have never made this before but my sister has and she says its great.

    1/2 pkg jimmy dean spicy hot sausage


    1/2 pound ground beef


    1/2 chopped yellow onion


    1 small can mushroom stems and pieces, diced


    1 large can hunts brand spaghetti sauce with mushrooms


    1 large can hunts brand spaghetti sauce with meat


    2 cloves garlic, peeled and cut on ends


    1 tsp Italian seasoning-basil, oregano,


    2 turkish bay leaves


    1 dash salt (to taste)


    2-3 dash sugar (to taste)

    LASAGNA SUPREMO: (The Best Lasagna Ever!)





    This is a recipe that I have been making for many decades, and everyone who has eaten my lasagna says that it is the BEST LASAGNA EVER!!! I have taken it everywhere, potluck suppers, church socials, family cook outs, I even put it in a contest once won 4th out of 200.





    FOR THE LASAGNA





    1 (1 lb) package lasagna noodles


    3/4 lb ground beef


    1/4 lb ground pork


    1 lb Italian sausage (thinly sliced)


    1 lb button mushrooms (thinly sliced)


    1 cup onions (chopped)


    6 cloves garlic (minced)


    2 teaspoons sugar


    1 tablespoon salt


    1 teaspoon dried basil


    1/2 teaspoon fennel seeds


    1/4 teaspoon ground black pepper


    2 eggs (lightly beaten)


    2 (15 ounce) containers ricotta cheese


    2 tablespoons dried parsley flakes


    1 cup pitted ripe black olives (sliced)


    1 lb mozzarella cheese (shredded)


    1 cup parmesan cheese (grated)





    FOR MARINARA SAUCE





    2 (14 1/2 ounce) cans hunts chunky crushed tomatoes


    2 (6 ounce) cans hunts tomato paste


    1/4 cup extra-virgin olive oil


    6 cloves garlic (cut in halves)


    1 teaspoon chopped garlic, in juice (from jar)


    1 shallot (diced)


    2 tablespoons dried oregano


    4 tablespoons dried Italian seasoning


    1 teaspoon dried basil


    1 tablespoon granulated sugar





    8 servings





    1 hour 45 minutes 45 mins prep





    FOR THE LASAGNA:


    Prepare lasagna according to package directions.


    Drain and set aside.


    Cook Italian sausage either in a skillet or by boiling in a pot of water, thinly slice crosswise and set aside.


    Brown the ground beef and ground pork in a skillet, drain off and discard fat.


    Add onion and garlic to the ground meat, stir and cook another 5 minutes.


    Add the sugar, salt, basil, fennel seeds, pepper and the Marinara sauce and simmer for 20 minutes.


    While the above mixture is simmering, combine in a large bowl the eggs, Ricotta cheese, and parsley.


    Preheat oven to 375 degrees.


    Take a 13 by 9 inch baking dish and spray the bottom with a non-stick spray, such as Pam.


    In the baking dish, spoon in a layer of 1/3 of the meat sauce.


    Then layer 1/3 of the lasagna pasta (overlapping each strip of pasta with the other).


    Then layer 1/3 of the Ricotta mixture.


    Then layer 1/3 of the sliced olives and 1/3 of the sliced Italian sausage.


    Then layer 1/3 of the sliced mushrooms.


    Then layer 1/3 of the Mozzarella and 1/3 of the Parmesan.


    Then continue to repeat the layering until all of the ingredients are layered.


    When the layering is completed, cover with aluminum foil, making certain that the foil is not touching the top of the lasagna, and bake for 25 minutes.


    Remove foil and bake, uncovered, another 25 minutes.


    Remove from oven and allow to sit and rest 10 minutes before cutting.





    FOR THE MARINARA SAUCE (by Alan Leonetti): Empty Hunts chunky crushed tomatoes and Hunts tomato paste into the pot.


    Add the extra-virgin olive oil to the pot.


    Slice the cloves of garlic crosswise into either halves or thirds or pieces, and dump them into the pot.


    Dice the shallot, and dump that into the pot.


    Add the rest of the ingredients, and stir to mix well with a large long handled wooden spoon.


    Do not strain, as the pulp adds to make this a thick and wonderful sauce.


    Cover and cook on medium heat, stirring every 10 minutes for about an hour or until it bubbles and is completely heated throughout.


    Reduce heat to simmer, and continue to simmer, stirring every 10 or 15 minutes to keep from burning or sticking to the bottom of the pot for 1 or 2 hours.


    Remove from heat and give it one last stir.


    Serve over spaghetti, ravioli, pasta or use for chicken parmesan, or anything that calls for a Marinara sauce.Could any one give me a good homemade lasagna recipe?
    Lasagna noodles, whole - cooked, drained and cooled.


    1 carton ricotta cheese pre mixed night before with cabernet sauvingon to a nice light pink, plus garlic, and basil (must sit to flavor)


    Hamburger, or some sort of ground meat if you wish (I'm a vegetarian) browned and set aside to be mixed in sauce AFTER cooking (interferes with spice development in sauce)


    Sauce is actually an important process... It's mostly a secret, so I can give you first step, and just ingredients in general so you figure it out, or you can create or buy your own favorite version.


    Olive oil, cabernet, diced tomatoes, red wine vinegar (dash - this can be overpowering if overdone, taste carefully for tangy flavor), basil, oregano, garlic, rosemary, tarragon -


    optionals: onion, black olives, hearty deep mushrooms like portabello, shitake, or morels - i usually use olives OR mushrooms, but, you can have all or none if you prefer marinara as well


    First step: olive oil in bottom of sauce pan on high heat - brown roast some garlic in pan for lighter flavor. Likely, you will add more raw pungent garlic in later, and olive oil as well. Add diced tomatoes - and you're on you're own from there. (Sorry - this sauce is one recipe/process I keep really secret.) Mix in meat if you like after flavoring.


    Mozerella


    Italian blend, or parmesan (not powder, real) or both


    Lay one layer noodles down in pan, spoon sauce over, top with shredded cheese. Lay another layer, top with ricotta, shreds, small amount of sauce - less than other layer without ricotta, another sauce and shreds, and so on. Make sure top layer is sauce, and only light shreds.


    Cover with foil, 40 to 45 minutes at 325 to 350 - depending on if sauce is cold from precooking or not, can be prepared ahead of time.


    Serve with real garlic bread - a baguette sliced in half lengthways, with butter that you melt with minced garlic in, cook on low for a few minutes, brush on bread when flavored through, top with mozerella parmesan combo or just parm, broil while lasagna cools till just browning, and a light salad with grape tomatoes, olives, red onion slices, and balsamic dressing. And of course a glass of cabernet!

    Well I don't know if you consider this homemade or not, but I buy the noodles you dont have to cook if i can, or cook the others by the box directions, I add a little salt and a little olive oil to the boiling water. I use my favorite jar pasta sauce and pour some in the bottom of a baking pan, then a layer or the noodles. I mix up a large container of ricotta cheese with a few tablespoons of parsley, an egg, a few tablespoons of parmesan cheese and about a cup of either shredded mozzarella or provolone cheese. Put a layer of this on top of layer of noodles then a layer of sauce and then repeat the layers, and cover with final layer of sauce to keep the noodles from over cooking. cover with foil and bake at 350 for around an hour, until you see it bubbly. sorry, I forgot the browned ground beef or italian sausage in the sauce.
    Cook about a pound of hamburger meat and add your favorite spaghetti sauce or make your own. Then layer in a dish, lasagna noodes, sauce mixture, ricotta cheese, mozzerella cheese until you've done 2-4 levels, then top with parmesan cheese and bake for about 40 minutes. Yummmm
    Giada Delaurentis has a great recipe for classic lasagne on the foodnetwork website. I used to go through the process of making an all day sauce and then I tried this recipe. It is soooooo easy, sooooooooo good and soooooo homemade.

    Preheat oven to 375 degrees F.





    Bechamel sauce:


    In a 2-quart pot, melt 5 tablespoons of butter over medium heat. When butter has completely melted, add the flour and whisk until smooth, about 2 minutes. Gradually add the milk, whisking constantly to prevent any lumps from forming. Continue to simmer and whisk over medium heat until the sauce is thick, smooth and creamy, about 10 minutes. The sauce should be thick enough to coat the back of wooden spoon. Remove from heat and add the nutmeg and tomato sauce. Stir until well combined and check for seasoning. Set aside and allow to cool completely.





    In a saute pan, heat extra-virgin olive oil. When almost smoking, add the ground beef and season with salt and pepper. Brown meat, breaking any large lumps, until it is no longer pink. Remove from heat and drain any excess fat. Set aside and allow to cool completely.





    In a medium sized bowl, thoroughly mix the ricotta and eggs. Season with salt and pepper. Set aside.





    Into the bottom of a 13 by 9-inch baking dish, spread 1/3 of the bechamel sauce. Arrange the pasta sheets side by side, covering the bottom of the baking dish. Evenly spread a layer of all the ricotta mixture and then a layer of all the spinach. Arrange another layer of pasta sheets and spread all the ground beef on top. Sprinkle 1/2 the mozzarella cheese on top of the beef. Spread another 1/3 of the bechamel sauce. Arrange the final layer of pasta sheets and top with remaining bechamel, mozzarella and Parmesan cheeses. Cut the remaining 2 tablespoons of butter into 1/4-inch cubes and top lasagna.





    Line a large baking sheet with aluminum foil. Place lasagna dish on top, cover and put on the middle rack of the oven and bake until top is bubbling, about 30 minutes. Remove cover and continue to bake for about 15 minutes.





    Simple Tomato Sauce:


    1/2 cup extra-virgin olive oil


    1 small onion, chopped


    2 cloves garlic, chopped


    1 stalk celery, chopped


    1 carrot, chopped


    Sea salt and freshly ground black pepper


    2 (32-ounce) cans crushed tomatoes


    2 dried bay leaves


    4 tablespoons unsalted butter, optional





    In a large casserole pot or Dutch over, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.





    Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.





    If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

    Does anyone have a veggie lasagna recipe that does not use ricotta or cottage cheese?

    I use plain yogurt for a lot of things -- cheese sauce for macaroni and cheese and it's really good.





    Try adding melted cheese/parmesean to the yogurt and maybe just add your vegetables to the sauce and you'll have your between layer spread.





    Give it a try. I used it a lot and my sweety doesn't even notice. It's so much more healthy.

    Preheat oven to 350 degrees F (175 degrees C). Spread 1 cup tomato sauce into the bottom of a greased 9x13 inch baking dish. Layer 1/2 each, lasagna noodles,, sauce, and Parmesan cheese. Repeat layering, and top with remaining 2 cups mozzarella cheese.


    Bake, uncovered, for 40 minutes. Let stand 15 minutes before serving.

    3 tablespoons extra-virgin olive oil


    1 medium Spanish onion, finely chopped


    1 medium carrot, finely chopped


    1 medium zucchini, finely chopped


    1 medium summer squash, finely chopped


    8 asparagus spears, cut into 1/4-inch slices


    1 pound fresh plain lasagna sheets


    2 cups tomato sauce, recipe follows


    1 1/2 cups canned white beans, rinsed and drained


    2 (10-ounce) packages frozen chopped spinach, thawed and squeezed dry


    3 cups shredded mozzarella


    1/2 cup freshly grated Parmesan


    3 tablespoons unsalted butter, halved


    Salt and freshly ground pepper





    Preheat oven to 375 degrees F.


    In a saute pan over medium heat, add extra-virgin olive oil. When almost smoking, add the onion and cook until soft, about 5 minutes. Add the carrot and cook for 3 minutes. Add the zucchini and squash cook for 5 minutes. Add asparagus and cook for 2 minutes. Remove from heat when all vegetables are completely cooked but still have a good crunch. Allow to cool.





    Using a 6-inch round cookie cutter, cut circles out of the lasagna sheets. You will need 18 circles. Coat the bottom of 6 (6-inch) gratin dishes with a teaspoon of tomato sauce in each. Place a circle of pasta on the bottom of each ramekin. Rinse the beans with water and season with salt and pepper. Divide the beans between each ramekin. Next, divide the spinach between the ramekins. Place a second layer of pasta on top and gently press down. Divide the sauteed vegetables among the ramekins and top with a tablespoon of tomato sauce in each. Place the third layer of pasta in each ramekin and coat with a tablespoon of tomato sauce. Sprinkle ramekins with the mozzarella and Parmesan cheeses, and top each with 1/2 tablespoon of butter. Line a baking sheet with aluminum foil and place gratin dishes on top. Bake in oven for 20 minutes or until brown and bubbling.








    Simple Tomato Sauce:


    1/2 cup extra-virgin olive oil


    1 small onion, chopped


    2 cloves garlic, chopped


    1 stalk celery, chopped


    1 carrot, chopped


    Sea salt and freshly ground black pepper


    2 (32-ounce) cans crushed tomatoes


    2 dried bay leaves


    4 tablespoons unsalted butter, optional


    In a large casserole pot or Dutch over, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 5 to 10 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 to 10 minutes. Add tomatoes and bay leaves and simmer uncovered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.





    Add 1/2 the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.





    If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

    3/4 pound dried lasagna noodles


    4 cups whole milk


    12 tablespoons (11/2 sticks) unsalted butter, divided


    1/2 cup all-purpose flour


    1 teaspoon freshly ground black pepper


    1 teaspoon ground nutmeg


    1 1/2 pounds portobello mushrooms


    1 cup freshly ground Parmesan








    Preheat the oven to 375 degrees F.


    Bring a large pot of water to a boil with 1 tablespoon salt and a splash of oil. Add the lasagna noodles and cook for 10 minutes, stirring occasionally. Drain and set aside.





    For the white sauce, bring the milk to a simmer in a saucepan. Set aside. Melt 8 tablespoons (1 stick) of the butter in a large saucepan. Add the flour and cook for 1 minute over low heat, stirring constantly with a wooden spoon. Pour the hot milk into the butter-flour mixture all at once. Add 1 tablespoon salt, the pepper, and nutmeg, and cook over medium-low heat, stirring first with the wooden spoon and then with a whisk, for 3 to 5 minutes, until thick. Set aside off the heat.





    Separate the mushroom stems from the caps and discard the stems. Slice the caps 1/4-inch thick. Heat 2 tablespoons of oil and 2 tablespoons of the butter in a large (12-inch) saute pan. When the butter melts, add half the mushrooms, sprinkle with salt, and cook over medium heat for about 5 minutes, until the mushrooms are tender and they release some of their juices. If they become too dry, add a little more oil. Toss occasionally to make sure the mushrooms cook evenly. Repeat with the remaining mushrooms and set all the mushrooms aside.





    To assemble the lasagna, spread some of the sauce in the bottom of an 8 by 12 by 2-inch baking dish. Arrange a layer of noodles on top, then more sauce, then 1/3 of the mushrooms, and 1/4 cup grated Parmesan. Repeat 2 more times, layering noodles, sauce, mushrooms, and Parmesan. Top with a final layer of noodles and sauce, and sprinkle with the remaining Parmesan.





    Bake the lasagna for 45 minutes, or until the top is browned the sauce is bubbly and hot. Allow to sit at room temperature for 15 minutes and serve hot.

    Ingredients





    * 9 lasagna noodles


    * 1 cup diced red onion


    * 4 garlic cloves


    * 1 cup diced zucchini


    * 1 cup diced yellow squash


    * 1 cup diced carrot


    * 1 cup diced mushroom


    * 1 cup diced red pepper


    * 1 cup diced broccoli


    * 1 cup diced cauliflower


    * 1 tsp dried italian seasoning

    * 1 26 ounce bottle classico tomato sauce

    Directions

    2. Cook noodles to instructions on box.

    Massimo's favourite: the crispy bits of pasta, the meat sauce and the béchamel make this lasagne an absolute delight.


    Bolognese sauce





    1 lb ground beef


    1 lb sausage meat loosened


    6 oz of ground pancetta (or prosciutto)


    3 cups of mixed ground onion celery and carrots minced


    4 garlic cloves


    2 cups of white wine


    16 oz of canned chopped tomatoes


    1 cup of milk


    4 cups of chicken stock


    2 Bay leaves


    2 oz Olive oil


    2 tbsp of butter


    Salt and pepper to taste





    1. Sauté the vegetables and the garlic with the oil and the butter, add the bay leaves and the pancetta and sauté until it is translucent.


    2. Add the meat to the vegetables and sauté over high heat; make sure to break up all the lumps of meat.


    3. Sprinkle with the wine and evaporate well, add the tomato and the stock and simmer covered for at least two hours, stir from time to time and do not let it stick and burn.


    4. One way of preventing the stick and burn problem is to cook this sauce in a preheated oven 425 degrees for the same amount of time.


    5. About half hour before is done stir the milk into it.





    Béchamel


    3 oz. Unsalted butter


    3 oz. White flour


    4 cups Homo milk


    Salt %26amp; pepper


    Grated nutmeg





    1. In a saucepan, melt the butter and add the flour, stir well and cook until it starts to change colour.


    2. Bring the milk to a boil and add it to the butter and flour, season to taste and allow to cook for about 20 minutes.





    The pasta


    2 lb lasagna sheet pasta (white or green)


    2 cups of grated Parmigiano reggiano cheese





    1. Boil the pasta in plenty of salted water until is cooked through and do not leave al dente.


    2. Strain and cool in ice water and pat dry with a clean kitchen towel, set aside until needed.





    To assemble the lasagne


    1. Use a lasagne dish 6 inch x 12 inch and about 2 inches high.


    2. Brush some butter in the dish and spread some sauce over the bottom.


    3. Top with béchamel and cover the bottom of the dish with pasta sheets, making sure to overlap them.


    4. The next layer should be béchamel, Bolognese, parmesan cheese and pasta. Repeat four times.


    5. Finish the top with the sauce first and the béchamel and cheese.


    6. Bake the lasagne for about 30 to 45 minutes at 350 degrees and let cool. Enjoy!

    9 pre cooked lasagne noodles


    1 tbsp veg oil


    1 ½ tsp crushed garlic


    1 c chopped zucchini


    1 c onion


    1 c diced sweet red pepper


    1 c sliced mushrooms


    2 c tomato sauce


    540 mL (19 oz) crushed tomatoes


    1 tsp dried basil


    1 tsp dried oregano


    1 ½ c 2% cottage cheese


    ½ c 2% milk


    ½ c grated Parmesan cheese


    8 oz shredded mozzarella cheese


    In large nonstick skillet, heat oil; sauté garlic, zucchini, onion, red pepper and mushrooms until softened, approximately 8 minutes.


    Add tomatoes, sauce, basil and oregano; cover and simmer for 15 minutes, stirring occasionally. Meanwhile, in food processor, combine cottage cheese, milk, and Parmesan cheese. Set aside. To assemble, arrange 3 noodles in bottom of baking dish.


    Pour 1/3 of sauce over top. Pour half of the cheese mixture over top. Repeat layering once. Top with remaining 3 noodles.


    Pour remaining sauce over top; sprinkle with mozza cheese.

    I would never ask for something like that here, because very few people are going to take the time to accurately describe a great recipe here. Just my two cents, i've been a member of recipezaar and recipe.com for many years.

    Lasagna Casserole





    1/2 (1 pound) pkg. penne noodles, cooked as package directs


    1/2 pound lean ground beef


    1 (26 ounce) jar tomato/pasta sauce of your choice


    1 (15 ounce) jar Ricotta cheese


    8 ounces shredded Mozzarella, divided into 2 cups


    1/4 cup grated Parmesan cheese


    1 egg





    Preheat oven to 350 F. In saucepan, over medium heat, cook ground beef until browned; drain fat. Add pasta/tomato sauce. In medium bowl, combine ricotta cheese, 1 cup mozzarella cheese, parmesan cheese, and egg. In lightly greased baking dish (recommend 2 1/2-quart) layer penne, sauce mixture, and cheese mixture. Repeat layers. Sprinkle remaining 1 cup mozzarella cheese over top. Bake 35 to 40 minutes.
    Fuggetaboudit!!! You have to try this one. This has to be thee best Lasagna I have ever had! Tyler Florence's recipes are pretty flawless. It might seem lengthy but it is just all about layering. Pretty easy and you can prepare it way in advance. Enjoy!

    Cook the lasagna noodles in plenty of boiling salted water until pliable and barely tender, about 10 minutes. Stir with a wooden spoon to prevent sticking. Drain the noodles thoroughly, coat with olive oil keep them moist and easy to work with.


    Coat a large skillet with olive oil. Saute over medium heat, onion, garlic and herbs. Cook 5 minutes. Brown beef and sausage until no longer pink, about 15 minutes. Drain fat into a small container and discard. Stir in the tomato paste completely. Set aside to cool.





    In a mixing bowl, combine ricotta, parsley and oregano. Stir in beaten eggs. Add Parmesan, season with salt and pepper.





    To assemble the lasagna: Coat the bottom of a 13 by 9-inch pan with a ladle full of tomato sauce. Arrange 4 noodles lengthwise in a slightly overlapping layer on the sauce. Then, line each end of the pan with a lasagna noodle. This forms a collar that holds in the corners. Spread 1/2 of the meat mixture over the pasta. Dollop 1/2 of the ricotta mixture over the meat, spread to the edges with a spatula. Sprinkle 1/2 of the mozzarella on top of the ricotta. Top with a ladle full of tomato sauce, spread evenly. Repeat with the next layer of noodles, meat, cheeses and sauce. Top last layer with noodles, sauce and shredded mozzarella and Parmesan. Tap the pan to force out air bubbles. Bake in a preheated 350 degree oven for 1 hour. Remove from oven. Let lasagna rest for 30 minutes so the noodles will settle and cut easily. Cut into 2-inch squares and serve.
    1 pound ground round beef


    1 pound Italian sausage


    1 pound Mozzarella


    1 pound cooked lasagna noodles

    1.Mix together cottage cheese and eggs in one bowl. Brown the sausage and mix with the sauce when cooked.





    2.Using one 9 × 13-inch pan and one 9 × 9-inch pan, begin layering, starting with noodles, then cottage cheese and eggs mixture, then sauce and sausage mixture, then Mozzarella cheese. Repeat this layering, ending with Mozzarella cheese on top.





    3.Bake at 350ºF, covered, for 30 minutes. Then continue baking 15 minutes uncovered. Let stand 10 minutes before cutting.

    1 large jar prego sauce


    1 pkg lasagna noodles


    mozzarella cheese


    1 carton cottage cheese


    1 lb hambuger


    cheddar cheese


    Brown hamburger (spray baking pan) spoon enough prego into bottom of 9x12 inch pan to cover. lay uncooked noodles on sauce. Add rest of sauce to browned meat. Spoon 1/2 onto noodles, cover well, spoon layer of cottage cheese. Cover generously with mozzarella and cheddar cheese. Repeat layers making sure all noodles have suace on them. Cover tightly with aluminum foil. Bake at 350 degrees for 45 minutes to 1 hour. Uncover and bake another 15 minutes. Check noodles with fork to see if they are tender.





    Quick Lasagna


    1 1/2 lb hamburger


    2 cans (8oz) tomato sauce


    8oz lasagna noodles cooked and drained


    1 pkg (8oz) mozzarella cheese


    1 envelope dry onion soup mix


    1 C water


    Brown meat, stir in onion soup mix, tomato sauce and water. Cover and simmer 15 mintues, stirring frequently. In 2 quart baking dish alternate layers of noodles, meat sauce and cheese, end wtih cheese. Bake in moderate over 15 minutes or until bubbly.





    Lasagna Roll Ups


    6 uncooked dried lasagna noodles


    6 uncooked dried spinach lasagna noodles


    1 lb ground beef


    1 large chopped onion (about one cup)


    1 jar 14oz spaghetti sauce


    1 can 8oz mushrooms, stem and pieces; undrained


    1 container 15oz ricotta cheese or small curd cottage cheese (2 cups)


    1 pkg 10 oz frozen chopped spinach thawed and squeezed to drain


    1 C shredded mozzarella cheese (4oz)


    1/4 C grated Parmesan cheese


    1 tsp salt


    1/4 tsp pepper


    2 cloves garlic, crushed





    Heat over to 350 degrees. Cook noodles as directed on package; drain. Cover noodles wtih cold water. Cook ground beef and onion in 10 inch skillet, stirring occasionally, until beef is brown; drain. Stir in spaghetti sauce and mushrooms. Heat to boiling. Pour into rectangular baking dish. 11x7x11 1/2 inches.


    Mix remaining ingredients. Drain noodles. Spread 3 tablespoons of the cheese mixture to edges of noodle. Roll up; cut roll in half to form 2 roll ups. Place cut sides down in beef mixture. Repeat with remaining noodles and cheese mixture. Cover and bake about 30 mintues or until hot and bubbly. Serve with grated Parmesan cheese, if desired.

    I only use sausage (like Jimmy dean or Bob Evans rolled sausage) I use 2 of them and after cooking and draining the fat I add a 12 oz. can of tomato paste along with enough water to make it saucy. Let that simmer on low heat and add garlic salt salt and pepper and whatever spices you like(i.e. if you like it hot) For the cheese I use a container of ricotta cheese along with fresh Parmesan mixed together. Spread your meat on the bottom of pan than put down your lasagna noodles, spread ricotta and Parmesan than put mozzarella on top, spread meat on top of that then start over with another layer of noodles. Bake at 350 for an hour covered than uncover and cook until cheese on top is melted.

    This lasagne requires a little more effort than usual. It's quite rich, so it goes quite far. Serve with a green salad to cut the richness.





    Pasta





    Ingredients:





    3 cups flour


    3 eggs, beaten (or substitute water, if you prefer)





    Preparation:





    Pile the flour on a work surface. Make a well in the middle, and pour in the beaten eggs. Using a fork (and without touching the flour), stir the surface of the egg rapidly. This will draw in the flour. Keep stirring until it becomes too thick to stir any longer. Knead in the rest of the flour, adding a little water if it seems very dry. Knead until smooth, and leave to rest while you prepare the meat and bechamel sauce.

















    Meat Sauce





    1 kg (2 lb) minced beef


    1 large carrot


    1 onion


    2 large cloves garlic (optional)


    2 celery ribs


    1 tin* tomatoes (or 2-3 fresh, skinned and grated)


    1 x 75g tin condensed tomato paste (about 3oz)


    salt and fresh-ground pepper to taste


    1-2 t dried mixed herbs (or any other seasoning you prefer)


    2 or 3 whole allspice (pimiento) berries, or 1/4 t dried allspice


    1 t each whole coriander, cumin and mustard seeds


    1/2 t dried chilli flakes, or 1 fresh chilli (or to taste - leave it out if you like)


    2 large tablespoons peanut butter (no, I'm not kidding!)


    about 1 cup red wine or stock


    2t sugar (if using wine, otherwise omit)





    Preparation:





    Note: Heat the milk for the bechamel sauce before you prepare the meat.





    Dice the carrot, onion and celery very finely.





    Note: Set aside about 1 tablespoon of each diced carrot, onion and celery for the bechamel sauce.





    Coarsely grind the coriander, cumin, mustard, and allspice with the garlic, using a spice grinder, mortar and pestle, or the flat blade of a large knife.





    Fry gently in a little oil until just fragrant. Add the chilli flakes, onion, carrot and celery. Fry gently until soft, then add the mince. Turn up the heat and brown the mince. When brown, add the tinned tomatoes. Rinse out the tin with a little water and add to the mince. Add the wine, sugar and tomato paste.





    Stir well, and leave to simmer gently for an hour or so, stirring occasionally. The end result should be quite thick, and not too liquid. Add the salt, pepper, herbs and peanut butter, and stir very well.














    Bechamel Sauce





    Ingredients:





    1 T each onion, carrot and celery (set aside from the mince ingredients)


    500ml (1 pt) milk


    500ml (1 pt) cream


    2 bay leaves


    1/4 t ground nutmeg


    pinch each ground cayenne pepper and ground mustard


    salt and pepper to taste


    2 T butter


    2 T flour





    Preparation:





    Add the vegetables and bay leaves to the milk, and microwave until almost boiling (or heat on stove top), before you prepare the meat.





    Once the meat is ready, strain the milk. Either discard the vegetables, or add to the mince mixture. Melt the butter. Add the flour, cayenne pepper and mustard flour. Cook gently until pale. Slowly add the milk, whisking quickly to prevent lumps. Then add the cream. Continue stirring until the sauce comes to the boil. Add the nutmeg, salt and pepper, and stir well.














    Topping





    Ingredients:





    1 cup fresh breadcrumbs


    1/4 cup grated parmesan (or more)


    salt, pepper and herbs to taste (I use finely chopped parsley)





    Preparation:





    Mix altogether.





    Assembly:





    Roll the pasta out quite thin, or use a pasta machine, and then line a greased oven dish with about half, leaving some hanging over the edges of the dish. (Ignore this if you use store-bought pasta - just layer sheets on the bottom of the dish). I usually use a shallow pyrex, about 11'; square.





    Layer half the mince, then half the bechamel sauce. Cover with the remaining pasta, then the remaining mince, and finally the remaining sauce. Fold the hanging edges of the pasta gently onto the sauce, then cover the entire surface with the topping.





    Bake at 200C (about 425F) for half an hour, until the topping has browned.
    There's usually a simple recipe on the back of the box of the lasagna noodles. I make mine with bechamel cheese sauce without ricotta but don't have a recipe for it because I never wrote it down and it comes out little different each time.
    Just make a bolognese sauce, layer with pasta and top with cheese sauce made with mature cheddar. Sprinkle with parmesan and basil. The perfect lasagne!
