Anybody have some really good lasagna recipes=)?

I've been making this recipe for 30 years...





Lasagna





Get a 2 to 3 jars of spaghetti sauce (Ragu, Prego...), one packages of lasagna noodles, 16 oz of mozzarella cheese, 16 ounces of ricotta cheese (or 16 ounces of cottage cheese), 1 egg, one half pound of Italian sausage and a pound of ground beef.





Prep:


Cook the lasagna noodles until they are done.





Get a 9 x 13 pan ready.





In a sauce pan fry the Italian sausage (remove meat from casings) and ground beef, drain and add the spaghetti sauce and heat.





Mix the egg in with the ricotta cheese, and a little salt and pepper.





Slice or grate the mozzarella cheese.





Assembly:


On the bottom of the pan, put a little of the spaghetti sauce, so the noodles don't stick (or spray with Pam). Then put a layer of the noodles, so you can't see the bottom. Put the length of the noodles going the same direction as the length of the pan. If you have any space at the bottom, put pieces of noodles in to plug the holes. Then put half of the ricotta cheese spread over the noodles, then half the mozzarella cheese, and pour half of the sauce over the cheese, then start over, noodles, ricotta, mozzarella, sauce. Sprinkle the top with Parmesan cheese and bake for 60 minutes at 350 degrees F or until bubbly. Let sit for 15 minutes before serving.Anybody have some really good lasagna recipes=)?

2 pound dried lasagna noodles


Extra-virgin olive oil


2 pounds ground beef


2 pound ground Italian sausage


1 onion, chopped


2 cloves garlic, sliced


3 carrots, chopped


2 stalks celery, chopped


2 tablespoons chopped fresh basil


1/4 cup finely chopped Italian flat-leaf parsley


1 tablespoon chopped oregano leaves


2 tablespoons all-purpose flour


2 cups red wine


2 (28-ounce) cans tomatoes (recommended: San Marzano)


3 tablespoons heavy cream


1 teaspoon ground cinnamon


2 quarts ricotta cheese, (2 containers)


2 eggs, lightly beaten


1/2 cup grated Parmesan


Kosher salt and freshly ground black pepper


1 pound mozzarella cheese, shredded


Grated Parmesan and mozzarella, for topping





Preheat oven to 350 degrees F.


Cook the lasagna noodles in plenty of boiling salted water until pliable and barely tender, about 10 minutes. Stir with a wooden spoon to prevent sticking. Drain the noodles thoroughly and coat with olive oil to keep them moist and easy to work with.





Coat a large skillet with olive oil, add beef and sausage and brown until no longer pink, about 10 minutes. Season with salt and pepper. In a food processor, combine the onion, carrots, celery, garlic, basil, parsley, an oregano. Process until pureed, add to the pan with the ground meat and stir to combine. Stir in the flour. Add the wine and cook until it has reduced by half. Stir in the tomatoes and add the heavy cream and the cinnamon.





In a mixing bowl, combine ricotta and the parmesan. Stir in the eggs and season with salt and pepper.





To assemble the lasagna: Coat the bottom of a deep 13 by 9-inch pan with olive oil. Arrange 4 noodles lengthwise in a slightly overlapping layer on the sauce. Then, line each end of the pan with a lasagna noodle. This forms a collar that holds in the corners. Dollop 1/2 of the ricotta mixture over the pasta, spread to the edges with a spatula. Spread 1/2 of the meat mixture over the ricotta. Sprinkle 1/2 of the mozzarella on top of the ricotta. Top with a ladle full of sauce, spread evenly. Repeat with the next layer of noodles, ricotta, sauce, and cheeses. Top last layer with noodles, sauce, shredded mozzarella and Parmesan. Tap the pan to force out air bubbles. Bake for 1 hour. Remove from oven. Let lasagna rest for 30 minutes so the noodles will settle and cut easily. Cut into 2-inch squares and serve.Anybody have some really good lasagna recipes=)?
Lasagna


1 lb ground beef


26 oz jar spaghetti sauce


1 med onion, chopped


6 c shredded mozzarella


1 g. pepper, chopped


24 oz container cottage chz


lasagna noodles


2 eggs





In a medium skillet, brown ground beef with onion and green pepper, season to taste (garlic powder, season salt, ground black pepper). Drain off grease. While browning meat, cook noodles according to package directions. In a mixing bowl, beat eggs and stir in cottage cheese. In greased 9x13x2 inch baking dish layer: noodles, 1/3 of the sauce, 1/2 of the meat, 1/2 of the cottage cheese, 1/3 of the mozzarella cheese. Repeat x1. End with noodles, remaining sauce and mozzarella cheese. Cover with foil and bake at 350 for 50 minutes. Uncover and bake additional 10 minutes, let stand 10 - 15 minutes before serving.





Taco Lasagna


2 lbs ground beef


10-12 large flour tortillas


1 onion, chopped


24 oz jar salsa


1 g pepper, chopped


1 16oz container sourcream


2 packages taco seasoning


4 c mexiblend shredded chz


4 cloves garlic, minced


2 cans sliced b olive


1/2 t. cayenne pepper


tomato, chopped


1/2 t. cumin


lettuce, shredded


1/2 c water


additional sourcream





In large skillet brown ground beef with onion and green pepper. Drain and season with taco seasoning, garlic, cayenne, chili powder, cumin and water. Simmer 10 minutes. Preheat oven to 375 degrees and grease 9x13x2 inch baking dish. Layer: tortillas, salsa, meat mixture, black olives, sour cream and cheese. Repeat layers. Top with tortillas salsa and cheese. Bake 35 - 40 minutes or until cheeses are melted. Serve garnished with lettuce, tomato, and sour cream or toppings of your choice.
I just made lasagna last night :) not to toot my own horn, but I make some awesome lasagna... everyone loves it, i never have leftovers! I usually just eyeball everything, but I'll put approximate amounts.





Ingredients:


1 box Lasagna Noodles


2 jars marinara sauce, or spaghetti sauce


16 or 32 oz container of ricotta cheese (I like a lot, but I know some people don't)


1 Egg


1 pound of shredded mozzarella cheese, or shredded italian blend cheese


Parmesan cheese (don't know how much, i just use a shaker and put on as much as I want)


1 pound of meat (I use jimmy dean's hot italian sausage, but you can use ground turkey, beef, or use veggies instead)


italian seasoning to taste





cook the meat and drain the fat. Mix ricotta cheese with the egg (sometimes I skip this step and leave the egg out because my nephew is allergic to eggs) spray a casserole dish with Pam, then coat the bottom with spaghetti sauce. put down a layer of lasagna noodles. spread about half the container of ricotta over the noodles. then, sprinkle about a third of the mozzarella on top of that. then, sprinkle some Parmesan cheese and italian seasoning, followed by about half of the meat. Pour some more sauce on top. Then put down another layer just like this (noodles, cheeses, meat, sauce) Then cover with a layer of noodles. Pour enough sauce over the top to cover the noodles. then sprinkle remaining mozzarella, along with some more parm and seasoning on top. Spray a sheet of foil with pam and cover. Bake at 350 for about an hour. Then, let it set for about 10 minutes before serving.





It's extra easy too because I don't cook the noodles before hand... the liquid in the sauce steams them because of the foil covering.





I saw a cooking show where he made it with peperoni for the meat... I think i might try that sometime... it looked really good.
鈾ou can buy pre made sheets of pasta, or make your own.


鈾or the sauce, either use your favorite pasta sauce or make your own (you will need alot!


鈾or the cheese, mix 125g of grated cheese, 2 cups of milk and 3 tablespoons of plain flour in a sauce pan and heat on medium flame till melted.


Then layer pasta sheet, sauce, cheese, pasta sheet, sauce, cheese etc on the tray your cooking it on. top it with parmesan cheese and bake in oven on 200C (400F)


for 35 minutes
