Chicken Lasagna with White Sauce
2 cups shredded mozzarella cheese
2 (10.75 ounce) cans condensed cream of mushroom soup
1 1/2 cups milk
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 egg
1 pint part-skim ricotta cheese
12 lasagne noodles, cooked and drained
2 cups diced, cooked chicken meat
1/2 cup grated Parmesan cheese
Preheat oven to 350 degrees F (175 degrees C).
Reserve 2/3 cup of the mozzarella cheese for the top layer of the lasagna. In a medium size bowl, combine remaining 1 1/3 cup mozzarella, soup and milk and set aside. In another medium size bowl, combine spinach, egg and ricotta. Mix well, then combine with soup mixture and mix all together.
In the bottom of a 13x9 inch baking dish, spread 1/3 of the mixture. Spread 1/3 of the chicken over the mixture and arrange 4 lasagna noodles over mixture and repeat. Top with remaining 1/3 of mixture, chicken, noodles and reserved 2/3 cup mozzarella cheese and Parmesan cheese.
Bake at 350 degrees F (175 degrees C) for 40 minutes or until hot and bubbling. Let stand 15 minutes before serving.Anyone have any good white sauce lasagna recipes?
SPINACH LASAGNA BECHAMEL
SAUCE:
6 c. milk
1 c. butter
1 c. white flour
Salt and pepper to taste
1/8 tsp. nutmeg
LASAGNA:
1/4 c. vegetable oil
2 cloves garlic, minced
2 c. onions, chopped
2 lb. spinach, frozen, thawed and drained
3/4 c. chopped fresh parsley
1 lb. ricotta or cottage cheese
2 eggs
2 c. grated Parmesan cheese
2 c. grated Mozzarella cheese
1 pkg. lasagna noodles
Sauce: Heat milk until hot but not boiling. In another pan melt butter. Whisk in flour, cook 3 to 4 minutes, stir constantly. Add milk gradually. Stir until sauce thickens.
Lasagna: Saute garlic and onions in oil until translucent. Stir in spinach and 1/2 cup of parsley. Set aside. Mix rest of parsley, ricotta or cottage cheese, eggs, 2/3 cup Parmesan cheese. Cook noodles al dente. Better yet, don't cook the noodles. Just layer the raw noodles in the pan as you would if they were cooked.
Oil a large pan, layer ingredients in following order. First, 1 1/2 to 2 cups of Bechamel sauce, 1/3 of noodles, half spinach mixture, all of Mozzarella. Next 1 1/2 to 2 cups of sauce, 1/3 of noodles, all the ricotta mixture, the rest of the spinach mixture. Finally, 1 1/2 to 2 cups sauce, remaining noodles, the rest of the sauce. Sprinkle 1 1/3 cup of Parmesan on top.
Bake covered at 350 degrees for 45 minutes. Uncover for another 10 minutes. Remove from oven and allow 10 to 15 minutes for lasagna to set before serving
Bechemel Sauce is the best for lasagne.
Heat 2 cups milk in a pot.
2 tbls melted butter
2 tbls plain flour
salt, pepper
minced garlic
parmesan cheese
mozzarella cheese (or tasty cheese), grated. 1/4 cup.
When heating milk add minced garlic, pepper and salt..
Combine melted butter and plain flour, this makes a rhou add more flour if to creamy. When milk is just starting to simmer add rhou, whisk until combined. With a wooden spoon stir until simmering, reduce heat and it will start to thicken add grated mozzarella cheese.
Remove from heat sauce will thicken when cooling.
Lay Mince in lasagne dish, then 1/4 amount of bechamel sauce, then lasagne sheets repeat again. then final layer should the rest of bechamel sauce and sprinkle mozzarella cheese.
