Veg lasagna is super easy to make. Simply replace the ground beef or sausage with fake meat replacements. Morningstar and Boca both make products that can be found in the frozen breakfast isle at pretty much any grocery store. My mom used to do this when I was a kid and no one noticed until she said that it was fake meat! Just use the recipe that you normally use and switch out the meat!
Have you done a google on this? I am sure you would find some good ideas for this. I do not make it but have had it out.
